Easy Cucumber and Red Bell Pepper Salad

This easy cucumber and red bell pepper salad is a light and fun salad recipe to try. It has few ingredients and is easy to prepare. Our southwest dip and dressing mix is made into a fun vinaigrette that is added to diced cucumber, red bell peppers, and onion to create a flavorful and easy salad for any time of the year.

Salads are great to throw together and serve with your meals to get your vegetables in. They can even be meals in themselves when you add meat to them or a variety of filling vegetables. There are many different types of salads too. From the classic garden salads to pasta salads to fruit salads, and more. Salads are a healthy, fun, and delicious way to add vegetables to your diet and create full meals that many will enjoy. 

Our easy cucumber and red bell pepper salad uses few ingredients to create a light and delicious salad that can be served alongside many meat dishes. It can also be added to our meal-prepping plans. We add a tasty and zesty southwest vinaigrette to diced cucumbers, red bell peppers, and onion to create a fun flavorful treat. This will quickly become a fun new go-to recipe you can enjoy.

Preparing the Vegetables 

Dice 1 large cucumber into bite-sized pieces. I usually use an English cucumber. You can peel the cucumber if you wish or rinse and leave the skin on. 

Deseed and dice a large red bell pepper into bite-sized pieces. You can also use other sweet peppers like the yellow or orange ones. 

Dice ½ small red onion into bite-sized pieces. 

Place the diced vegetables in a medium mixing bowl.

Making the Southwest Vinaigrette 

In a small bowl whisk together 4 tablespoons olive or avocado oil, 3 tablespoons white wine vinegar, and 2 tablespoons Chugwater Chili Dip & Dressing Mix

Combining the Salad 

Pour the vinaigrette over the diced vegetables and toss until they are well coated.

Refrigerate for about 20 minutes or more to let the flavors infuse together.

How to Serve Cucumber and Red Bell Pepper Salad 

Now that you have made this tasty cucumber and red bell pepper salad you are ready to serve it. This is best served chilled. You can serve this salad with any meat, take it to a potluck to share with friends or family, use it in your meal-prepping routine, and so much more. This is an easy salad to make and does not require a lot of time. It will quickly become a new favorite to go to the salad if you want something light and refreshing to eat or if you need to use some extra cucumbers you may have growing in the garden.

You can also customize this salad and add some extra vegetables, pasta, or quinoa to it.
