In a medium pot sauté ½ diced onion with 3 tablespoons butter until the onion becomes translucent.

Season with 2 tablespoons of Chugwater Chili Dip and Dressing Mix. This adds a great garlic and onion flavor to the chicken base for this casserole dish.

Add in 2 cups shredded chicken, 16 ounces of chicken broth, 1 cup heavy cream, and 2 cups frozen or canned mixed vegetables ( I like to use the carrot, corn, peas, and green bean blend to add a variety of tasty vegetables to this dish.) Stir and bring to a simmer for about 5 minutes.

Note: I used chicken I shredded off a cooked rotisserie chicken from the grocery store. This is an easy way to get your shredded chicken and the chicken is usually tender and delicious too. Some stores also carry pre-shredded chicken in their deli departments.

Adding the Biscuits to the Casserole

Transfer the chicken and vegetable base into a baking or casserole dish that has been sprayed with cooking spray to help prevent it from sticking to the pan.
