Stuffing the Mini Peppers

Take mini sweet peppers or if you want larger peppers, use large red or orange bell peppers and cut them in half lengthwise. The sweet peppers are nice because they add a fun sweet and spicy flavor to this recipe. Remove the seeds but leave the stems.

Baking the Stuffed Mini Peppers

Place the stuffed peppers on a baking sheet that has been sprayed with cooking spray. For easy cleaning up I like to line the baking sheet with foil.

Add a pinch of shredded cheese to the tops of the stuffed peppers.
