Preparing the Steak
Flatten out 1 pound of thinly sliced sirloin steak. If the steak is not thin enough then You can use a meat tenderizer to flatten and tenderize it.
Cut the steak into 2-inch-wide strips. You can make the strips smaller or larger depending on how many fajita roll-ups you want to create with this recipe.
Season the steak with 1 ½ tablespoons Chugwater Chili Seasoning and 1 tablespoon olive oil. If you like it spicier you can always use our Chugwater Chili Hot Chili Seasoning. Set aside to marinate while you prepare the bell pepper and onion strips.
Preparing the Bell Pepper and Onion Strips
In a medium skillet sauté 3 different colors of sliced bell pepper strips and 1 large yellow onion that has been sliced into strips in 2 tablespoons of oil (this can be olive oil or avocado or vegetable) until they become tender. Sprinkle with ½ tablespoon Chugwater Chili Seasoning or Chugwater Chili Hot Chili Seasoning and stir. Pull from skillet and set aside on a plate.
Making the Fajita Roll-Ups
Place the cooked slices of peppers and onions on one side of the seasoned steak strip and roll. Secure with a toothpick. Repeat until you have used all of the steak.
Cooking the Fajita Roll-Ups
In the same medium, skillet cook the fajita steak roll-ups until each side is browned. You can turn them with a pair of cooking tongs.
