Preparing the Vegetables
You will want to dice up one red bell pepper into small pieces.
Deseed and core a small jalapeno and dice it up. If you want the dip to be spicier, then you can add in more jalapeno pieces.
Making the Creamy Fiesta Ranch Sauce
In a small bowl, combine 2 cups sour cream, 3 tablespoons mayonnaise, and 2 tablespoons Chugwater Chili Dip & Dressing Mix. Mix until well blended.
Combining the Dip Ingredients
In a medium bowl, combine two 15-ounce cans of whole kernel corn that have been drained, a 15-ounce can of diced tomatoes with green chilies like Rotel, one diced red bell pepper, one diced jalapeno (if you want it spicier then add more jalapenos), 1/2 onion diced, and ½ cup shredded fiesta cheese blend or cheddar cheese blend.
Add in the creamy southwest ranch sauce.
