Dips are easy-to-serve dishes to take to parties and potlucks. They are also great if you want a snack night with the family or an easy meal. There are so many different types and varieties of dips out there from cold dips to hot dips to fruit dips or vegetable dips. Dips are great because you can serve them with chips, vegetables, crackers, or use them as spreads on your bread. They can also serve a small crowd of people.
Our green chile chicken enchilada party dip is an easy dip to make. It falls into the hot dip category because you will bake it to heat it up. We combine our award-winning green chili seasoning with cream cheese, sour cream, diced green chilies, shredded chicken, green chile enchilada sauce, and shredded cheese to create a cheesy, gooey flavorful dip. This can be served any time of the year for any occasion.
Combining the Green Chile Chicken Enchilada Party Dip Ingredients
In a medium bowl combine 1 cup shredded chicken, 8 ounce brick softened cream cheese, ¼ cup sour cream, 4 ounce can mild diced green chilies, 10 ounce can green enchilada sauce, 4 ounces shredded fiesta blend cheese, and 3 tablespoons Chugwater Chili Green Chili Seasoning. Stir until well combined.
For the shredded chicken, I like to use a rotisserie chicken from the local grocery store deli. Some have the chicken already shredded and ready to use. You can also cook up a chicken breast and shred it if you want to.
Baking the Dip
Add the combined dip into a medium baking dish that has been sprayed with cooking spray. Spread out evenly in the dish and cover with 4 ounces shredded fiesta blend cheese.
Cover with foil and bake at 375 degrees for 30 minutes or until the dip starts to bubble and the middle is heated through.
Slow Cooker Instructions
If you are headed to a party and want to keep this dip warm then you can cook it in a slow cooker. You will simply add the combined dip into the slow cooker, cover it with the 4 oz shredded fiesta blend cheese, and cook on low for 2-4 hours or until the dip is cooked through.
