Seasoning and Cooking Up the Shrimp
Toss about 12-15 large raw shrimp that have been peeled and deveined with 1 tablespoon of Chugwater Chili Dip and Dressing Mix and 1 tablespoon of olive oil.
Add to a medium skillet with 4 tablespoons of butter and cook until the shrimp has turned pink.
Pull the shrimp from the pan and set aside so you can start making the parmesan cream sauce.
Making the Parmesan Cream Sauce
In the same pan with the leftover butter, add ½ jar of chopped sundried tomatoes, ¼ diced onions, 1 tablespoon of Chugwater Chili Dip and Dressing Mix, and ½ tablespoon minced garlic. Saute until the onion becomes translucent and the seasoning and sundried tomatoes have time to cook together and season the butter.
An optional add-in is adding some mushrooms and sauteeing them in the butter sauce.
Stir in 2 cups of heavy cream and 1 cup of grated Parmesan cheese. I have found that the grated Parmesan melts into the cream more evenly than shredded Parmesan cheese. Simmer until the cheese has melted into the cream. Stir often to get the Parmesan cheese mixed into the cream.
Add the shrimp back in and 2 cups chopped fresh spinach. I like to use fresh because it doesn't get slimy and mushy from being overcooked.
Simmer until the spinach is soft. Make sure to stir often so that your sauce does not burn to the bottom of the pan.
As the sauce simmers, it should thicken. If you want the sauce to be thicker, you can add some flour to your butter sauce before you add in the cream and parmesan cheese.
