Easy Beef and Bean Enchiladas

This easy beef and bean enchilada recipe is a flavorful dinner to make any day of the week. Using our Chugwater Chili Seasoning to season the enchilada meat, this is going to be an easy dinner your family will enjoy.

This easy enchilada recipe is simple to make with only a handful of ingredients that you can usually find in your pantry.

Our Chugwater Chili Seasoning makes for a great taco seasoning that you can use for your enchiladas or burritos. The combination of spices creates a flavorful taste that makes these enchiladas explode on your taste buds. If you like extra heat in your enchiladas you can always use our Hot Chili Seasoning to season the meat. Add the seasoned taco meat with beans and cheese to tortillas and top with enchiladas sauce before baking. It is as simple as that and you will have a hearty meal to enjoy with the family. 

Seasoning the Enchilada Meat

Brown 1 pound of ground beef in a medium skillet.

Then add in ½ small onion that has been diced and cook until the onion has softened this takes about 5 minutes.

Season the browned meat with 2 tablespoons Chugwater Chili Seasoning and mix until the meat is coated in the seasoning. Then you can pull the skillet off the oven and start assembling your enchiladas.

Assembling the Enchiladas

On a flour tortilla spread a spoonful of refried beans (if you prefer black beans you can use those) in the center of the tortilla.

Then add a pinch of shredded cheese onto the tortilla. You will need to save 2 cups of cheese for the top of the enchiladas.

Add in a spoonful of the seasoned enchilada meat to the center of the tortilla. And repeat the process with each tortilla until you have used the ingredients. Should make about 4-5 enchiladas.

Roll the tortilla into an enchilada and place in a 9”x 9” inch baking dish that has been sprayed with cooking spray. make sure the overlapping fold is on the bottom of the enchilada. 

Pour the can of enchilada sauce on top of the enchiladas then add the remaining shredded cheese.

Baking the Enchiladas

Bake covered at 350 degrees for 30 minutes until the cheese melts. Then you are ready to serve this tasty enchilada dish.

How to Serve Beef and Bean Enchiladas

Serve these easy enchiladas right out of the oven. They will become a fun family dinner. If you feel like making extra you can always add them to a disposable aluminum pan and freeze them for a future meal. There are so many different things that can be done with these enchiladas. Ingredients

  • 1 pound ground beef
  • 1/2  small onion, diced
  • 1/2 - 16 ounce can refried beans
  • 10 ounce can enchilada sauce
  • 4 cups shredded cheddar cheese
  • 2 tablespoons Chugwater Chili Seasoning
  • 5 medium-sized tortillas

Instructions
