Street Corn Dip

This street corn dip is a flavorful new dip to make. Our chili seasoning adds a fun spicy flavor when added to a creamy cheese sauce and corn. This will become a fun new dip recipe to make any time of the year for parties, BBQs or other get-togethers.

Street corn is a fun food truck or street cart staple enjoyed in a variety of countries around the world including Mexico and the United States. It is a street food that consists of a grilled ear of corn covered in a crema sauce or mayonnaise and then sprinkled with chili powder or Tajin and cotija cheese and cilantro. It is spicy, creamy, and cheesy. 

Our street corn dip takes this fun street food off the cob and turns it into a fun party dip that can be shared with friends and family or served as a fun appetizer before your dinner. Our chili seasoning adds a fun spicy flavor to this recipe. Add in a cheesy creamy base and you have a tasty dip that can be enjoyed with tortilla chips or crackers. This recipe is also fun because it can be made in a skillet on the stove, in a baking dish in the oven, or added to a slow cooker to keep warm. This dip recipe is perfect if you are looking for something fun to serve at tailgating events or football watch parties. It can even be made for potlucks or as a snack.

How to Cook Street Corn Dip 

Oven Baked Option: 

In a medium bowl combine ½ diced red onion, 3 cups whole kernel corn (frozen or canned), 1 cup sour cream, 8 ounces cream cheese that has been softened, 1cup pepper jack cheese (if you want a milder cheese you can substitute in Monterey jack cheese instead), and 2 tablespoons Chugwater Chili Seasoning.  If you want it spicier use the Chugwater Chili Hot Chili Seasoning instead.

Stir and transfer to a baking dish.

Bake at 375 degrees for 50 minutes or until the edges start to bubble. 

Top with cotija cheese and cilantro. You can also sprinkle a little chili seasoning on top too.

Slow Cooker Option: 

In a medium skillet sauté ½ diced red onion with 2 tablespoons butter and 3 cups whole kernel corn. 

Add in 1 cup sour cream, 8 ounces of cream cheese that has been softened, 1 cup pepper jack cheese, and 2 tablespoons Chugwater Chili Seasoning.

Transfer to a slow cooker and cook for 3 hours on high or 5 hours on low. Or until the cheese has melted. 

Top with cotija cheese and cilantro. You can also sprinkle a little chili seasoning on top too.

Stovetop/Skillet Option:

In a medium skillet sauté ½ diced red onion with 2 tablespoons butter and 3 cups whole kernel corn. 

Add in 1 cup sour cream, 8 ounces of cream cheese that has been softened, 1 cup pepper jack cheese, and 2 tablespoons Chugwater Chili Seasoning. Stir until melted. 

Top with cotija cheese and cilantro. You can also sprinkle a little chili seasoning on top too.
