Chicken Tortilla Soup

This chicken tortilla soup recipe, courtesy of Chef Steven Warren of Noble House Hotels and Resorts, is a quick 30-minute soup recipe with chicken and fresh veggies. It’s spiced with our Gourmet Chili Blend and full of flavor.

Chicken tortilla soup is a classic Mexican soup. There are many variations, but most recipes combine vegetables with chicken in a broth flavored with chile or chili seasoning. As the name suggests, tortillas are also included. and there are versions where corn tortillas are cooked down in the soup, which thickens it. Other recipes, like this one, include crispy tortilla chips served either on the side or as a garnish.

This cozy chicken soup recipe, from Chef Steven Warren, is a big seller at his restaurant in Naples, Florida despite the sunny warm weather. As you’ll see, chicken tortilla soup doesn’t have to be complicated and take hours to make.

We love this soup recipe - it’s full of fresh flavors from bell peppers, cilantro and onion balanced by the warm flavors of our signature chili seasoning.

Chef Warren’s recipe uses roasted chicken and homemade chicken broth. To make things easier, use a rotisserie chicken you can buy at the grocery and your favorite boxed chicken broth.

How to Make Chicken Tortilla Soup

The chicken tortilla soup starts with diced green peppers and onions that are cooked together in a large pot or Dutch oven until softened.

Once the vegetables are softened, make a well in the center. Place the chili seasoning, ground cumin, and garlic in the well. Warm them for 30 seconds before stirring them into the vegetables.

Add the shredded chicken and stir to coat it in the spices.

At this point, you can add the diced tomatoes. Stir to combine it all together.

Add the chicken stock, bring the soup to a boil, and simmer it for 15 to 20 minutes.

Toppings for Chicken Tortilla Soup

We like to top our soup with fresh cilantro, tortilla chips, and a squeeze of fresh lime juice. Here a few more ways you can garnish your chicken tortilla soup:

  • Add a dollop of sour cream
  • Top it with creamy diced avocado
  • Add a spoonful of fresh pico de gallo for a pop of freshness
  • Sprinkle shredded cheddar cheese or crumbled queso fresco over the soup

Chicken Tortilla Soup

Chef Steven Warren of Noble House Hotels and Resorts in Naples, Florida, says that despite the warm Florida temps, soup is a big seller there. For his recipe he recommends raw corn tortillas. This recipe uses a broth and meat from a whole chicken, but if pressed for time pre-shredded chicken and packaged chicken broth works as well.

  • 2 teaspoons oil
  • 1 teaspoon salt
  • 1 small white onion, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 2 teaspoons Chugwater Chili gourmet blend
  • 1 teaspoon ground cumin
  • 6-8 ounces shredded chicken
  • 1 can diced tomatoes
  • 4 cups chicken stock
  • fresh cilantro leaves
  • sliced lime
  • corn tortilla chips


How to cook Chicken Tortilla Soup

  1. Heat oil in a large Dutch oven over medium heat. Saute onions, green bell pepper, and salt until softened, about 3 minutes.
  2. Make a well in the center of the Dutch oven. Add the garlic, Chugwater Chili Gourmet Blend, and ground cumin. Let warm for 30 seconds then stir into onions and bell pepper.
  3. Stir in the shredded chicken.
  4. Stir in the diced tomatoes.
  5. Add the chicken stock, bring to a boil, and let simmer 15-20 minutes.
  6. Serve with corn tortilla chips, cilantro, and lime.
