Slow Cooker Chicken Chili

This slow cooker chicken chili is an easy slow cooker recipe featuring our chili seasoning and dip-dressing seasoning. The combination of the two flavors gives you a wonderful chili flavor with a hint of onion and garlic. It is a wonderful chicken chili that can be made while you are off at work or if you have a busy schedule.

What are Slow Cookers and Why Use Them?

Slow cookers are wonderful kitchen appliances that help you to serve a tasty meal with a busy schedule. There are many types of slow cookers on the market but they all function about the same. A slow cooker typically has a high or low setting that you can use. If you want your meal sooner rather than later, you can use the high setting just make sure you check your food often because you don’t want anything to burn. If you have time to let your meal cook longer you should use the low setting.

There are also a variety of sizes of slow cookers. You have small slow cookers that are perfect for making dips or fondues. There are also larger slow cookers that can hold a meal for your family. When you go to buy a slow cooker make sure to check sizes and make sure that the size is right for you.

The nice thing about slow cookers are that you can keep the mess of your meal contained in one place. It also nice because most meals you can just dump the ingredients in the cooker and go. Slow cookers are also perfect for if you have to take a dish to a party or friends house. You can load it up, find an outlet, and keep the food warm until it is ready to eat.

Slow cookers are a wonderful item to have in your kitchen. They are great if you don’t want to start up the stove or if you do not have access to a stove. How to Make Chicken Chili in a Slow Cooker

Ingredients to make chicken chili

For this chicken chili recipe, you will need to use 2 chicken breasts. You can use either thawed or frozen chicken breasts. If you use frozen your cook time might increase. Place the chicken breasts in the slow cooker bowl. Now add in a can of rinsed black beans.

Dump in 1 cup frozen corn and one cup of water if you don’t have frozen corn and you have a can of corn just add the can with the liquid and it serves as an equivalent of a cup of frozen corn and a cup of water.

Add 1 can of fire roasted diced tomatoes or a diced tomato of your choice. You can use diced tomatoes with green chilies if you like that flavor in your chicken chili.

Now it is time to add in your seasonings. Add 1 Tbs Dip-Dressing Mix and 2 Tbs Chugwater-Chili Seasoning.

If you want a creamy chicken chili you can add in 1 brick of Cream Cheese and let it slowly cook in your chili. However, if you have issues with dairy you might want to skip this step. You can also make a creamy chicken chili by adding sour cream before you serve also.

Let the slow cooker cook for about 4 hours on low, then use two forks to shred the chicken in the slow cooker. Then turn it to warm and serve when you are ready. This recipe makes at least 6 servings and makes great leftovers.

  • 2 Chicken Breasts
  • 1 Can Black Beans, Rinsed
  • 1 Cup Frozen Corn and 1 Cup Water
  • Or 1 Can Corn with liquid
  • 1 Can Fire Roasted Diced Tomatoes
  • 2 Tablespoons Chugwater Chili Dip-Dressing Mix
  • 1 Tablespoon Chugwater Chili Seasoning
  • 1 Package Cream Cheese (8 ounces) Lowfat or Regular

How to cook Slow Cooker Chicken Chili

  1. Place chicken in the slow cooker. Add the black beans.
  2. Add the frozen corn and one cup of water. Or add one can of corn plus liquid.
  3. Add the fire roasted diced tomatoes.
  4. Add the Dip-Dressing Mix and Chugwater-Chili Seasoning.
  5. Add the Cream Cheese.
  6. After about 4 hours, use two forks to shred the chicken right in the crock pot.
