Chili Lime Chicken Soup

How to Sauté Vegetables in the Soup

In a medium-sized pot sauté 1 medium-sized diced onion, ½ diced jalapeno (if you want it more spicy use a whole jalapeno. If you do not like the heat add in some diced bell pepper instead.), 4 chopped garlic cloves, and 3 diced celery stalks in 3 tablespoons of vegetable or olive oil until the onion becomes soft or translucent.

Seasoning the Chili Lime Chicken Soup

Season the sauteed vegetables with 2 ½ tablespoons of Chugwater Chili Seasoning, 1 teaspoon of oregano, 1 teaspoon of cumin, ½ teaspoon of salt, and ½ teaspoon of pepper. Stir together.

Simmer the Chicken and Tomatoes

In the pot add in 1 chicken breast, 32 ounces of chicken broth, and 10 ounces of diced tomatoes with green chilies. Boil for 10 minutes then simmer the soup for 30 minutes.

Finish Cooking the Soup

After simmering the soup for 30 minutes pull the chicken breast out and shred it then add it back into the soup pot along with ¼ cup lime juice and ½ cup chopped cilantro. Simmer for about 5 minutes then you are ready to serve this tasty chicken soup.

How to Serve Chili Lime Chicken Soup

Ingredients:

  • 1 medium sized onion, diced
  • 3 celery stalks, diced
  • ½ -1 jalapeno, diced
  • 4 garlic cloves, chopped
  • 1 chicken breast, thawed
  • 32 ounces chicken broth
  • 3 tablespoons vegetable oil or olive oil
  • 10 ounce can diced tomatoes with green chilies
  • ¼ cup lime juice
  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • 2 ½ tablespoons Chugwater Chili Seasoning
  • ½ cup cilantro, chopped
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions:

  1. In a medium sized pot sauté the onion, jalapeno, garlic, and celery in the oil until the onion becomes soft or translucent.
  2. Season with the Chugwater Chili Seasoning, oregano, cumin, salt, and pepper.
  3. Add the chicken breast, chicken broth, and diced tomatoes with green chilies to the pot.
  4. Boil for 10 minutes, simmer for 30.
  5. Take the chicken breast out and shred then add the shredded chicken back to the pot with the lime juice and cilantro. Simmer about 5 minutes.
  6. Serve with a dollop of Chugwater Chili Dip and crushed tortilla chips on top. Add with your favorite salad recipe.
