Easy Taco Soup

This easy taco soup recipe is a delicious and satisfying way to keep warm this fall and winter. Our chili seasoning added to the ground beef, tomatoes, corn, and beans creates a great taco flavor. When eating this soup, you will be coming back for another bowl.

Soups are so much fun to make. Especially in the fall and winter months when the weather turns chilly and all you want to do is warm up with either a nice warm blanket or meal. Taco soup is packed with taste nutrients that will help keep you full and healthy. It has corn, tomatoes, beans, beef, and our all natural and gluten free chili seasoning to create a well-rounded soup.

This recipe is great to serve the whole family or if you want to meal prep with the leftovers. You can even freeze some of it to heat up for later. The opportunities are endless with this taco soup recipe. We are even including a slow cooker option for your busy schedules.

Making Taco Soup

Cooking Up the Ground Beef

In a medium pot, brown 1 pound of ground beef (you could also do ground turkey or venison if you prefer), then add in ¼ cup of diced onion and cook 5 minutes until onion starts to soften.

Season the ground beef with 3 tablespoons of Chugwater Chili Seasoningand 1 packet of Ranch Seasoning. (Optional: If you want an extra cumin flavor add in 1 teaspoon of cumin in with the meat too.) Stir together until meat is seasoned.

Adding in the Other Ingredients

Now it is time to add in your other ingredients. Add in a 15 ounce can of pinto beans, a 15 ounce can of kidney beans, a 15 ounce can of black beans, a 15 ounce can of whole kernel corn, 1 cup of water, 2- 15 ounce cans of stewed tomatoes (if you do not want large chunks you can dice the stewed tomatoes to make smaller pieces), and 3/4 cup of salsa. You do not need to drain the cans of beans, corn, or tomatoes.

Let the taco soup for around 30 minutes. Now you are ready to serve your taco soup.

Serving Taco Soup

Now that you have created this easy and delicious taco soup it is time to enjoy it. This taco soup can be served with crushed tortilla chips, diced onion, chopped cilantro, shredded cheese, or sour cream on top. You can even add a dollop of our Chugwater Chili Dip. Enjoy this soup at anytime for any occasion whether it is cold day that is perfect to eat a warm soup or when you just have a craving for some taco soup.

Slow Cooker Taco Soup Option

Let it cook in your slow cooker on low for around 6 hours or high for 4 hours. Now you are ready to serve your taco soup.

Ingredients

  • 1 pound ground beef
  • 15 ounce can pinto beans
  • 15 ounce can kidney beans
  • 15 ounce can black beans
  • 15 ounce can whole kernel corn
  • 2- 15 ounce can stewed tomatoes, diced
  • 3/4 cup salsa
  • ¼ cup onion, diced
  • 1 cup water
  • 1 packet of Ranch Dressing Seasoning Mix
  • 3 rounded tablespoons Chugwater Chili Seasoning
Optional
  • 1 teaspoon cumin

Instructions

  1. In a medium pot, brown ground beef then add in diced onion and cook 5 minutes.
  2. Season the ground beef with the Chugwater Chili Seasoning and Ranch Seasoning. Optional: If you want an extra cumin flavor add the cumin in here too. It is up to your taste preferences. Stir together.
  3. Add in the cans of beans, corn, water, stewed tomatoes, and salsa. You do not need to drain the cans of beans, corn, or tomatoes.
  4. Simmer together for around 20 minutes then serve with tortilla chips, shredded cheese, and cilantro.
