Sautéing the Pepper and Onion
In a large skillet sauté 1 diced green bell pepper and ¼ onion that has been diced in 1 tablespoon olive oil.
Cook until onion becomes translucent then add 1 tablespoon of minced garlic. You can use fresh garlic or get pre-minced garlic from the store.
Adding in the Seasoning, Rice, and Tomatoes
Now you will want to add in 1 can of diced tomatoes with green chilies, 1 cup of long grain rice, and 2 tablespoons of Chugwater Chili Seasoning (if you want a spicier dish you can use the Hot Chugwater Chili Seasoning), and 1 can chicken broth. Stir until combined.
Note: If you want to make this vegan or vegetarian friendly you can use a can of vegetable broth instead of chicken broth.
Cooking the Rice in Your Skillet
Bring the skillet to a boil then reduce the heat and simmer until the rice has become tender. Stir occasionally.
Adding in the Corn and Black Beans
Now it is time to add in 1 drained can of whole kernel corn, and 1 drained, rinsed can of black beans. Stir and cook until the corn and beans are heated through.
How to Serve Easy Southwest Rice
Once the easy southwest rice is cooked you are ready to enjoy it. You can serve it with chopped cilantro on top or add in some crumbled queso or cotija cheese. This is a great rice dish that can be enjoyed with your favorite entrees such as tacos, burritos, enchiladas, and much more.
