Easy Southwest Rice

This easy southwest rice is a fun, colorful, and quick side dish to make any time of the week. Seasoned with our chili seasoning, this healthy vegetable-packed rice recipe is an excellent addition to your recipe box.

Finding a fun, healthy, and easy-to-make rice dish is always a bonus. Rice can be a great side dish to add to your meals to make them healthy and filling. Typically it is low-calorie and can go with almost any type of meat. Plus there are a variety of ways to cook up your rice. You can add it to casseroles, make dishes like fried rice, or make a rice pudding dessert dish. 

Our one-pot easy southwest rice dish is a quick and easy way to make a fun rice dish that adds flavor to your meals. It pairs well with tacos, burritos, enchiladas, quesadillas, and much more. You can also make taco or burrito bowls with it by adding your favorite meat to the top. This rice dish is jam-packed with healthy ingredients to create a flavorful and delicious dish that everyone will enjoy. You can also alter this recipe to make it vegan and vegetarian friendly.

Sautéing the Pepper and Onion 

In a large skillet sauté 1 diced green bell pepper and ¼ onion that has been diced in 1 tablespoon olive oil.

Cook until onion becomes translucent then add 1 tablespoon of minced garlic. You can use fresh garlic or get pre-minced garlic from the store.

Adding in the Seasoning, Rice, and Tomatoes 

Now you will want to add in 1 can of diced tomatoes with green chilies, 1 cup of long grain rice, and 2 tablespoons of Chugwater Chili Seasoning (if you want a spicier dish you can use the Hot Chugwater Chili Seasoning), and 1 can chicken broth. Stir until combined. 

Note: If you want to make this vegan or vegetarian friendly you can use a can of vegetable broth instead of chicken broth.

Cooking the Rice in Your Skillet

Bring the skillet to a boil then reduce the heat and simmer until the rice has become tender. Stir occasionally. 

Adding in the Corn and Black Beans

Now it is time to add in 1 drained can of whole kernel corn, and 1 drained, rinsed can of black beans. Stir and cook until the corn and beans are heated through.

How to Serve Easy Southwest Rice 

Once the easy southwest rice is cooked you are ready to enjoy it. You can serve it with chopped cilantro on top or add in some crumbled queso or cotija cheese. This is a great rice dish that can be enjoyed with your favorite entrees such as tacos, burritos, enchiladas, and much more. You can also great taco to burrito bowls by adding meat to the top of the rice and adding other toppings such as salsa, Chugwater Chili Dip, diced avocado, and much more. You can also make this a full meal by adding in diced chicken or some ground or shredded beef when cooking it. There are so many opportunities and fun meals to create when making this southwest rice skillet.

If you use instant rice you will want to decrease the liquid a little.
