Southwest Chicken Tortellini Soup

This easy southwest chicken tortellini soup creates an explosion of flavors for your taste buds. Using our chili seasoning in a southwestern broth with chicken, cheese tortellini, and other tasty ingredients, this will be an easy soup you will keep in your recipe book for life.

Soup is always a great way to warm up in the fall and wintertime. They are also an easy one pot meal that you can enjoy year-round. Finding easy to make soups is always a bonus especially if you have busy schedules or like easy recipes to cook. 

This southwestern chicken tortellini soup is a healthy and delicious soup. We add the cheese goodness of cheese tortellini to a southwestern broth with vegetables to create tasty flavors for you to enjoy. This is not your traditional tortellini soup, but it will become a new household favorite. This is a great customizable soup for your dietary needs and food preferences. Make it a vegetarian soup by not adding the chicken and substituting out the chicken broth for vegetable broth. 

Prepping the Southwestern Broth 

In a medium sized pot sauté, 2 tablespoons of olive oil,1 small diced onion, 1 diced red bell pepper, and 1/2 -1 diced jalapeno (If you like it spicy then use a full jalapeno. If you want it less spicy ten use a half jalapeno.). Cook until the onion becomes translucent and peppers become tender.

Next add in 32 ounces chicken broth, a 16 ounce can black beans, 1 cup frozen corn, 16 ounce can diced tomatoes with green chilies, and 2 tablespoons Chugwater Chili Seasoning

Cooking and Shredding the Chicken 

You will need to add in 2 thawed chicken breasts to the broth. Boil for 25 minutes until the chicken breast is cooked through. 

Take out the chicken breasts, shred them with two forks, then add back into the pot.

Finishing the Southwest Tortellini Soup 

Next add in 10 ounces cheese tortellini into the pot and simmer until they become tender. You can test this with a fork. If the fork easily stabs through the tortellini then it is ready.

How the Serve the Southwest Chicken Tortellini Soup  

Now that you have finished cooking this easy southwest tortellini soup it is time to enjoy it.

Southwest Chicken Tortellini Soup

Ingredients

  • 2 chicken breasts, thawed
  • 1 medium bell pepper, diced
  • 1 small onion, diced
  • ½-1 jalapeno, diced
  • 2 tablespoons Chugwater Chili Seasoning
  • 32 ounces chicken broth
  • 16 ounce can black beans
  • 1 cup frozen corn
  • 10 ounces cheese tortellini, frozen
  • 16 ounce can diced tomatoes and green chilies
  • 2 tablespoons olive oil

Instructions

  1. In a medium sized pot sauté, the olive oil, onion, red bell pepper, and jalapeno and cook until onion becomes translucent.
  2. Add in the chicken broth, beans, corn, diced tomatoes with green chilies, and Chugwater Chili Seasoning.
  3. Add in the chicken breasts. Simmer for 25 minutes.
  4. Take out the chicken breast, shred, then add it back into the pot with the frozen tortellini. Simmer until the tortellini is tender.
  5. Serve hot and top with chopped cilantro.
