Preparing the Ground Beef
Brown 1 pound of ground beef. You can also use ground turkey, venison, or bison meat. Add ¼ of an onion that has been diced and cook until the onion becomes translucent.
Add 1 tablespoon of Chugwater Chili Seasoning. If you want this recipe to be spicier add in the Chugwater Chili Hot Chili Seasoning instead. Stir until meat is coated in the chili seasoning.
Preparing the Cauliflower Base
In a medium bowl combine 1 tablespoon olive or avocado oil, 4 cups frozen cauliflower, 15 oz can black beans, 15 oz can diced tomatoes with green chilies, 1 red bell pepper that has been diced, and remaining Chugwater Chili Seasoning or Chugwater Chili Hot Chili Seasoning. Toss until well combined. Note: If you want finer cauliflower you can use 3 cups of riced cauliflower instead of the solid florets.
Layer the cauliflower mixture on the bottom of a baking dish.
Preparing the Cauliflower Bake for Baking
Spread the taco-seasoned ground beef evenly on top of the cauliflower base and cover the baking dish with foil.
Bake at 375 degrees for 30 minutes.
Pull from the oven, add about 2 cups of shredded Fiesta blend cheese on top, and cook uncovered until the cheese is melted. If you like extra cheese you can add more than 2 cups to the top.
