2 pounds ground beef
*I like 85%, but if a lower fat content is what you are wanting, a 90% ground beef is good too. With the Chugwater Chili Seasoning, the taste will not be compromised.
3/4 teaspoon baking soda
2 tablespoons water
3 tablespoons Chugwater Chili Seasoning
Shredded iceberg lettuce
Chugwater Southwest Style Seasoning Dip
1. Toss ground beef with 3/4 teaspoon of baking soda and 2 tablespoons water. Let the meat sit for 20 minutes. The baking soda locks the water in the beef so that during cooking, the beef browns nicely and stays moist. Read about it in Cook's Illustrated November and December 2015.
2. In a heavy bottomed pan on medium-high heat, cook the ground beef until no pink remains. Remember the pastry cutter? Use it to chop the beef into small pieces.
3. Add 3 tablespoons of Chugwater Chili Seasoning, more or less to taste.
