Creamy Green Chile Corn Bake

This fun creamy green chili corn bake is a flavorful experience that will bring your corn dish to life. Just a few ingredients combined with our green chili seasoning creates an easy-to-make corn dish that your family will enjoy.

Corn is a frequently used side dish that is typically easy to make and goes with almost any main dish. There are a variety of ways to make and serve corn. You can just add some butter, salt, and pepper to kernels and cook. Or you can make corn on the cob by boiling or grilling the corn. You can also do a corn bake or corn casserole. There are a lot of options when it comes to this ancient vegetable that has evolved a lot since the times of the Aztecs and Mayans.

This green chili corn bake is a fun new corn recipe to learn to make. It takes our green chili seasoning and combines it with corn, green chilies, onion, cream cheese, butter, and shredded cheese to make a delicious and gooey corn bake.

Making the Creamy Green Chili Base

In a small skillet sauté 1/2 diced onion and 4 ounces of canned green chilies with 2 tablespoons of butter. Cook until the onion becomes translucent.

In a medium bowl combine the sauteed vegetables with 8 ounces of softened or whipped cream cheese.

Add in 1 1/2 tablespoons Chugwater Chili Green Chili Seasoning and 1/4 cup sour cream. Stir until seasoning is blended into the cream cheese.

Combining the Corn and Green Chili Base

Now you will take 2- 16 ounce cans of whole kernel corn that has been drained and add to the cream cheese mixture. Fold until the corn is coated in the cream cheese.

If you prefer to use frozen corn you will need 3 cups of frozen corn.

Baking the Corn Bake

Transfer the corn to a 9”x9” baking dish that has been sprayed with cooking spray. Place 2 cups of shredded cheese on top.  Bake at 350 degrees for 20-25 minutes if you are using canned corn or 30-35 minutes if you are using frozen corn.

Ingredients

  • 8 ounces Cream Cheese, softened or whipped
  • 2 tablespoons Butter
  • ½ onion, diced
  • 4 ounce Green Chilies
  • 1 ½ tablespoons Green Chili Seasoning
  • 16 ounce cans Whole Kernel Corn, drained
  • ¼ cup sour cream
  • 2 cups cheddar cheese or fiesta blend, shredded

Instructions

  1. In a small skillet sauté the onion and green chilies in the butter until the onion becomes translucent.
  2. In a medium bowl mix the cream cheese with the sauteed vegetables.
  3. Add in the sour cream and green chili seasoning, stir.
  4. Fold in the corn until it is coated in the cream cheese mixture.
  5. Place the corn in a 9" x9" baking dish with cheese on top then bake until cheese has melted.
  6. Bake at 350 for 20-25 minutes. 
  7. Serve with any main dish.

Notes:

If you use frozen corn you will need 3 cups and to bake for 30-35 minutes.
