Easy Shrimp Fajitas

This easy shrimp fajita recipe is a flavorful treat seasoned with our chili seasoning. Add bell peppers and onion slices to the shrimp to create an easy meal that you can cook for a weeknight treat or use if you are meal prepping meals for the week.

Sometimes it is nice to have a delicious and healthy meal that can be thrown together in a hurry. Life can get busy or it can be tough deciding what to cook for dinner. I have often found myself staring at my refrigerator or pantry and wondering what I can easily throw together to make a meal.

Fajitas are great because they take few ingredients but create a tasty meal that you can customize for your taste preferences. Not only can you have a variety of fun fajita toppings, but you can also make other meals with the fajita filling. Make a fajita bowl with rice and beans or just eat the shrimp, peppers, and onions on their own. If you do not like shrimp you can easily make chicken fajitas too by substituting the shrimp out for chicken slices.

Prepping the Fajita Ingredients

For this recipe, you will need 2 small bell peppers, any color. I like to mix the green, red, yellow, or orange bell peppers to give the fajitas a little mix of colors. You will also want ½ of a yellow or sweet onion. Slice these vegetables into thin strips. Some grocery stores already have pre-sliced bell peppers and onions in their produce section.  This can help cut down on prep time if you want.

Next, you will need 1 pound of jumbo shrimp. If in a hurry you can use frozen pre-cooked shrimp that has already been peeled. You can also choose if you want to de-tail the shrimp or keep the tail on. I like to take the tail off my shrimp when making fajitas.

If you use uncooked shrimp, make sure they are peeled and have had the veins removed.

Season the shrimp by tossing them in 2 tablespoons of Chugwater Chili Seasoning. Make sure all the shrimp are coated in the seasoning. If you like things spicy you can always use the Chugwater Chili Hot Chili Seasoning.

Cooking Fajitas in a Skillet

In a medium skillet, you will want to heat 2-3 tablespoons of olive oil or an oil of your preference. Cook the bell peppers, onions, and seasoned shrimp in the oil until they become tender with the edges charred and shrimp is fully cooked.

Serving Shrimp Fajitas

Fajitas are great because they can be added to tortilla shells with toppings or added with rice and beans to make a fajita bowl.

Ingredients

  • 1 pound shrimp, de-veined, peeled, and de-tailed
  • 2 small bell peppers, any color 
  • 1/2 yellow or sweet onion 
  • 3 tablespoons olive oil 
  • 2 tablespoons of Chugwater Chili Seasoning 

Instructions

  1. Season the shrimp by tossing them in 2 Tbs of Chugwater Chili Seasoning.  If you like things spicy you can always use the Chugwater Chili Hot Chili Seasoning.
  2. In a medium skillet, you will want to heat 2-3 Tbs of olive oil or an oil of your preference. 
  3. Cook the bell peppers, onions, and seasoned shrimp in the oil until they become tender with the edges charred and shrimp is fully cooked.
  4. Serve with tortilla shells and your favorite fajita toppings.
