Green Chile Chicken and Corn Chowder

This green chile chicken and corn chowder is a quick and easy soup to warm you up when the weather cools down. Our green chili seasoning adds a wonderful green chile flavor when mixed with the chicken, corn, and other tasty ingredients in this recipe. It will quickly become a new favorite soup recipe to serve.

Chowder recipes are so much fun to make when the weather gets chilly and you need something to warm you up. Or if you are just in the mood for a chowder and salad dinner. There are so many types of chowders out there from classic creamy clam chowders to cheesy ham chowders. Chowders are a fun hearty soup that can be enjoyed by many. 

Our green chile chicken and corn chowder recipe is a fun creamy and delicious recipe. Featuring our green chili seasoning combined with corn, cheese, chicken, and diced green chilies. This chowder recipe is quick, easy, and can be thrown together in a hurry. You can cook it on the stovetop or if you want to let it cook all day for a meal at home you can even add in to the slow cooker.

Cooking Green Chile Chicken and Corn Chowder on the Stove 

Preparing Your Ingredients 

For your 2 cups of pre-shredded chicken it is easiest to get a pre-cooked rotisserie chicken and shred the meat off of it. Not only is the chicken pre-cooked for you but it also is tender when you add it to your chowder. Or find pre-shredded chicken at your grocery store's deli. I find it is easier when you are in a hurry to use pre-shredded rotisserie chicken. 

Dice up ½ a small onion. Usually, the small sweet onions add a nice flavor to this recipe. 

Next peel and dice 2 medium potatoes. This can be any potato variation however if they are a harder potato it might take longer for them to tenderize when cooking the chowder. 

Now that you have prepped these ingredients it is time to throw together the chowder. 

Sautéing the Onion 

In a medium pot sauté the onion until it becomes translucent.

Combining the Chicken, Corn, and Green Chiles 

Next add in the shredded chicken, diced potatoes, 15 ounces chicken broth, 15 ounces creamed corn, 4 ounces diced green chilies, ½ cup frozen whole kernel corn, 3 cups half and half, and 2 tablespoons Chugwater Chili Green Chili Seasoning

Stir together and simmer for about 40 minutes or until potatoes are tender. Stir occasionally. 

Adding in the Shredded Cheese 

Next, add in 2 cups shredded pepper jack or Monterey jack cheese and simmer until melted into the soup. If you like it spicier use the pepper jack or more mild use the Monterey jack.

Cooking Green Chile Chicken and Corn Chowder in the Slow Cooker

In the slow cooker add in your add in the shredded chicken, diced potatoes, 15 ounces chicken broth, 15 ounces creamed corn, 4 ounces diced green chilies, ½ cup frozen whole kernel corn, 3 cups half and half, 2 cups pepper jack cheese (for a spicier chowder) or Monterey jack cheese (for a milder chowder) and 2 tablespoons Chugwater Chili Green Chili Seasoning. Stir together. 

Cooking in the Slow Cooker 

Cook on low for about 6 hours or high for 8 hours or until the potatoes are tender. 

How to Serve Green Chile Chicken and Corn Chowder 

Now that you have cooked the green chile and chicken corn chowder it is time to serve it. This is a great dish served any time of the year but can be a great treat on a chilly fall or winter day. Serve it with your favorite rolls, cornbread, salads, and much more. If you want a fun crunch treat to add when eating the chowder try out some crackers in it.
