Sweet and Spicy Shrimp in Red Pepper Jelly Glaze

This easy shrimp recipe features a sweet and spicy combination of our signature chili seasoning and red pepper jelly. It is a quick and easy recipe that only features 4 ingredients. You can easily make this recipe for a weeknight meal, appetizer, or delicious treat when you feel like having seafood.

Seafood can be a fun treat to add into your meal plans every once in a while. Shrimp is an easy seafood dish that can be customized in a variety of ways. Most people are familiar with breaded shrimp, shrimp scampi, grilled shrimp, or coconut shrimp.

We decided to combine our chili seasoning and red pepper jelly to see what it would taste like on shrimp. This flavorful combo of sweet and spicy is an excellent way to eat shrimp. It can be baked or grilled. If you are looking for a new way to make shrimp you should try this out. You will not be disappointed by the explosion of flavor that this combination creates across your taste buds.

Picking Shrimp to Use

For this sweet and spicy shrimp recipe, it is best to use a larger shrimp like a jumbo shrimp. If you are making a large batch or using them for small appetizers you can use a smaller shrimp. When you got to buy your shrimp, you have several options for what you can buy. You can get shrimp that have not been peeled or peeled shrimp. I usually get the already peeled shrimp with the tail on because it cuts down on prep time. It is your choice what option you wish to go with. If you do go with the shrimp that has not been peeled, you will need to peel them for this recipe.

How to Make Sweet and Spicy Shrimp in the Oven

Preheat your oven to 350 degrees. Toss about 10-15 jumbo shrimp in 1 Tbs olive oil and 2 Tbs of Chugwater Chili Gourmet Blend. (If you want them to be spicier you can always add more chili seasoning.) Make sure that the shrimp are coated evenly with the chili seasoning.

When baking the shrimp, you can use a baking sheet that has been sprayed with cooking spray or a baking pan. This will help with the shrimp sticking to the pan. When I make this recipe, I like to cover the baking sheet in foil to help with clean up after adding the red pepper jelly glaze.

Bake the shrimp for 15-20 minutes, flipping the shrimp halfway through at 10 minutes. This ensures that each side gets evenly cooked.

 Add the Sweet Red Pepper Jelly Glaze

You will mix 8 Tbs Chugwater Chili Red Pepper Jelly and 2 Tbs warm water to make a glaze. Adding the water, with the jelly helps to thin it down to make it baste on the shrimp and make application of the glaze easier. However, if you just spread the jelly on the shrimp it will melt down as it heats. Pour or baste on to the chili seasoned shrimp. Cook on broil for 5 minutes. This helps cook the glaze onto the shrimp.

How to Cook Glazed Shrimp on the Grill

If you decide that you want to cook this easy shrimp recipe on the grill you can follow the same steps as cooking it in the oven. Instead of using a baking sheet you will want to use bamboo skewers or metal skewers. For the bamboo or wood skewers, it is important to soak them in water before use.

Set your grill to 350 degrees. Place the chili seasoned shrimp on the skewers, cook for 20 minutes flipping the skewers halfway through then baste with the red pepper jelly glaze during the last 10 minutes.

This glazed shrimp recipe is easy to make and adaptable to your cooking situations. It can be made in the oven or the grill and turns out delicious every time.
