This easy potato recipe is the perfect match for any meal or even to add to your morning breakfast plans. Potatoes are combined with onion, bell peppers, and seasoned with our delicious southwest flavored dip & dressing mix.
Potatoes are a very common staple in most pantries. There are many different ways to prepare them and eat them. From chips to fries to baked potatoes there are so many ways to cook up this vegetable. It is often fun to try new potato recipes to switch up the usual way you prepare them. Plus, you never know if you will find a new recipe that will quickly become a favorite.
Our southwest skillet fried potatoes are an easy new way to cook potatoes. Adding in our Chugwater Chili Dip & Dressing Mix Seasoning to the potatoes, onion, and bell peppers you can create an easy side dish recipe that can be used for breakfast, lunch, or dinner. You can even add these potatoes to other recipes that are your favorites such as scrambles or breakfast burritos.
How to Prep the Potatoes
For this recipe, you will need to wash and peel 3 large potatoes. Once you have them peeled and washed then you can either dice them into bite-sized cubes or slice them into ¼ inch discs. It just depends on how you like to eat them.
Prepping the Other Ingredients
Now that you have the potatoes prepped you need to dice ½ yellow onion and 1 bell pepper, any color you want. I usually use a green or red bell pepper or sometimes I use a half of each to add more color to the dish. You can dice the onion into smaller chunks than the bell pepper if you do not want them super visible in your dish.
How to Cook Potatoes in a Skillet
Heat a medium skillet, add in 3 tablespoons olive oil (if you like frying potatoes in coconut oil or lard you can add use them too), then add the potatoes. Cover with a lid and stir every 5 minutes.
Cook the potatoes until they start to get soft and brown then add in the onion, bell pepper, and 1 ½ tablespoons of Chugwater Chili Dip and Dressing Mix. Stir then cook until the peppers and onion become tender.
How to Serve Southwest Fried Potatoes
Once you have the potatoes and vegetables cooked you are ready to serve them. There are many ways you can serve this southwest potato skillet. You can serve them as a side dish to accompany your favorite meat. Or you can add sausage to them to create a meal or stuffing for a breakfast burrito. This potato recipe is easy to make and adaptable for your meal needs.

Southwest Skillet Fried Potatoes
Ingredients
- 3 large potatoes
- ½ yellow onion, diced
- 1 bell pepper, any color, diced
- 2 tbs olive oil
- 1 ½ Tbs Chugwater Chili Dip & Dressing Mix
Instructions
- Heat a medium skillet and add the olive oil.
- Add the potatoes to the skillet. Cook until potatoes start to brown.
- Add in the onion, bell peppers, and Chugwater Chili Dip & Dressing Mix. Cook until the peppers and onion become tender.
- Serve hot with any meal. Or make it a meal by adding sliced smoked sausage or chicken.
